It's that time of year again. Time to celebrate the people without whom not a single one of us would be here. Now trying to use boring cliches and stereotypes to come up with a post about Mums isn't really our style - they're weird and different and have strange tastes just like everyone does.
But...almost everyone loves pancakes. And breakfast in bed surely has universal appeal? Therefore we suggest these Sticky Date Pancakes might be the perfect thing to wake your mum up with in the morning. Tender, buttery pancakes studded with soaked medjool dates, and topped with Bee One Third honey have 'thanks for everything' written all over them. And that's what tomorrow is all about!
We served these on our Falcon Enamel plates & tea pot, with Fog Linen Napkins and mango wood platter, and Bee One Third honeycomb.
Sticky Date Pancakes
- 8 medjool dates
- 1 tsp vanilla bean paste
- 50g butter, melted
- 2 cups plain flour
- 2 tsp baking powder
- pinch of salt
- 4 eggs
- 2 cups milk
- Bee One Third Honey, to serve
Stone and chop the dates into 1 cm (ish) pieces. Place in a small bowl with the vanilla bean paste, and add enough boiling water to just barely cover the dates (no more than 1/3 cup). Melt the butter and set aside. Place the flour baking powder and salt into a large mixing bowl and stir to combine. Seperate the eggs, placing the whites in a separate mixing bowl, and adding the yolks to the flour mix. Add the milk, melted butter, and soaked dates to the flour as well, and stir everything until a lumpy batter is formed - don't over-mix. Whisk the egg whites to soft peaks, and then fold through the batter. Cook the pancakes in a non-stick frying pan over medium heat until golden brown on both sides and cooked through. Serve with Bee One Third honey.
